We sat down with Maybe Sammy founders Stefano Catino, Vince Lombardo and Martin Hudak to find out a little bit more about their business journey.

After opening our pizza and cocktail bar, Maybe Frank in 2015 we observed what grew to be a loyal following of guests who not only loved our pizza but became engaged in our cocktail bar. Naturally, this led to the expansion of the group by opening Maybe Sammy, continuing the inspiration taken from the famous "Rat Pack” era but with its own style and identity focused on the explosive fun that was the 50s & 60s in Las Vegas. It’s a place for guests to experience world-class cocktails in a vivacious, stylish and welcoming environment.

It’s interesting because Maybe Sammy Cocktails was always a concept we had been working on, before the pandemic. A rendition of what’s now known as our Original Trio Pack; Jasmine Negroni, Chamomile Martini, and Eucalyptus Gimlet was available at Maybe Sammy & Maybe Frank since 2019. Then shortly after we officially launched, Covid hit. Fortunately for us, bottled cocktails and drinking at home (although with no real choice at that point) became popular! Our guests were still able to enjoy our award-winning cocktails, delivered to their door and a whole new clientele also followed. Ready-to-pour cocktails are perfect because you don’t require any tools, simply pour over ice in your favourite glassware, and garnish if you want to feel fancy. 

That’s a tough one, but with the launch of our new Stardust menu, we’d have to say our Flower In The Sun. Inspired by Janis Joplin, a smooth mix of Bacardi 8yo Rum, Talker 10yo Whisky and Muyu Chinotto Nero with Spiced Pomegranate and Australian Native Tea. So tantalising it might be worth taking home…soon...

Indeed, we’re very humbled to have received such recognition within our industry. Our secret is not so much a secret; our theatrics, live music, and bubble guns certainly make us unique! But at the heart of it, our goal is for every guest to have the best night of their lives. Most importantly we pride ourselves on making everyone feel welcomed and ensuring they have good old fashioned fun. Sydney-siders in particular are some of the best hospitality guests in the world, they're exposed to such quality experiences they really appreciate what it means to enjoy a speciality service. People travel from all over the world to experience Maybe Sammy, it truly is a magical place.

We’ve been extremely fortunate to travel all over the world for various pop-ups and takeovers with some of the world's best bars. But if we could go back in time to be behind any bar that served the greats, Frank Sinatra, Dean Martin and Sammy Davis Jr. such as The Savoy Hotel in London, Purple Room in Palm Springs or Patsy’s in New York.
